Vegan Strawberry Peach Cobbler

Ingredients

  • ½c vegan butter
  • 1c all-purpose flour
  • 2c sugar, divided
  • 1tbsp baking powder
  • 1tsp salt
  • 1tsp vanilla extract
  • 1c oat milk(any full fat type plant milk will work)
  • 4c Peach & Strawberry slices(Fresh or Frozen)
  • 1tbsp lemon juice
  • Ground cinnamon or nutmeg
    Directions
  • Melt butter in a 13- x 9-inch baking dish.
  • Combine flour, 1 cup sugar, baking powder, & salt; add vanilla extract & milk, stirring just until dry ingredients are moistened. Pour batter over butter (do not stir).
  • Bring remaining 1 cup sugar, peach & strawberry slices, & lemon juice to a boil over high heat, stirring constantly; pour over batter (do not stir). Sprinkle w/ cinnamon or nutmeg, if desired.
  • Bake at 375°F for 40 to 45 minutes or until golden brown. Serve cobbler warm or cool.
