Ingredients:

  • For the Nuggets:
      • 1 lb (450g) chicken breast, cut into bite-sized pieces

    • 1 cup  almond flour
    • 1/2 cup grated  Parmesan cheese
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1/2 tsp paprika
    • 1/2 tsp salt
    • 1/4 tsp black pepper
    • 2 large eggs
    • 2 tbsp heavy cream (optional, for extra moisture)
  • For Frying:
    • 1/4 cup coconut oil or avocado oil (or oil of choice for frying)

Instructions:

    1. Preheat Oven (if baking): If you prefer baking, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  1. Prepare the Breading:
    • In a shallow bowl, combine the almond flour, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
    • In another bowl, whisk together the eggs and heavy cream (if using).
  2. Coat the Chicken:
    • Dip each chicken piece into the egg mixture, allowing any excess to drip off.
    • Coat the chicken in the almond flour mixture, pressing gently to ensure it sticks well.
  3. Cook the Nuggets:
    • For Frying: Heat the oil in a large skillet over medium heat. Add the chicken nuggets in a single layer and cook for 3-4 minutes on each side, or until golden brown and cooked through. Be sure not to overcrowd the pan; you may need to cook them in batches.
    • For Baking: Place the coated chicken nuggets on the prepared baking sheet. Bake for 15-20 minutes, flipping halfway through, until golden brown and the internal temperature reaches 165°F (74°C).
  4. Serve: Allow the nuggets to cool slightly before serving. They pair perfectly with your favorite low-carb dipping sauce or a side of veggies.
